Happy National Chocolate Cake Day! To celebrate, let’s take a new look at an old favorite with this HEALTHY Garbanzo Bean Chocolate Cake recipe from Longevity’s Registered Nurse Dietitian, Kristen Forbes!
What’s the verdict? Score one for the health nuts, gluten-avoiders, and curious bakers of the world. This is one tasty cake. Check out Longevity’s recipe below:
Garbanzo Bean Chocolate Cake
1 1/2 cups semisweet dark chocolate chips (lowest sugar possible)
1 can organic garbanzo beans– rinsed and drained
1/4 cup honey or agave nectar
1/2 teaspoon baking powder
1 tablespoon confectioners’ sugar for dusting– optional
Preheat oven to 350 degrees F. Grease and flour a 9” round pan. Place the chocolate chips in a microwavable safe bowl and cook for 2 minutes, stirring every 20 seconds after the first minute until chocolate is melted and smooth.
Combine the beans and eggs in a food processor or blender. Process until smooth. Add the honey and baking powder. Pour in the melted chocolate and blend until smooth. Transfer the batter to the cake pan.
Bake for 40 minutes or until a knife is inserted into the center of the cake comes out clean. Cool for 10-15 minutes before serving.
